Broccoli and Cauliflower Casserole


 

Doesn’t this look like comfort food?  It’s so delicious and yet it has 2 POUNDS of vegetables in the 9 x 13!  Yes, I said VEGETABLES.  I got the inspiration for this recipe after eating hash brown casserole leftovers for three days in a row… and I still wasn’t tired of it.  I’ve had the creamed cauliflower at Ruby Tuesday and it’s pretty good.  Last week I had cauliflower au gratin at a restaurant and it was to-die-for.  …and so this recipe was born.  Now I can eat it as often as I darn well please and not feel as guilty.  There are not any potatoes in it at all!

Ingredients:
1 lb. bag of frozen broccoli florets
1 lb. bag of frozen cauliflower
1 can cream of celery soup (98% Fat Free)
1 (8 oz.) container of light sour cream
2 cups of shredded sharp cheddar cheese
1-2 TBS dehydrated “chopped onion” OR ½ cup fresh chopped onion
            I used 2 TBS dehydrated “chopped onion”
½ cup milk
1 ts salt
½ ts ground black pepper

Topping:
½ stack Ritz crackers, crushed up


 Directions:
Preheat oven to 350 degrees.
Be sure to buy broccoli florets instead of cut broccoli because the cut broccoli seems to have more stems.
Cook the broccoli and the cauliflower.  I cooked the broccoli in the microwave (COVERED) for 7 minutes. 
I also cooked the cauliflower in the microwave (covered) for 7 minutes.

 Chop up the cooked vegetables so they’re not so chunky.




Mix the next 7 ingredients (soup, sour cream, cheese, onion, milk, salt, and pepper) in a large bowl.
Add the broccoli and the cauliflower to the mixture.  Mix well.  Put in greased 9 x 13” casserole dish.

 Crush ½ stack of Ritz crackers and sprinkle on top.

Bake uncovered for 35 minutes or until heated through.  Enjoy!!


Notes: You can use fresh broccoli and cauliflower, BUT frozen vegetables have at least as many nutrients as fresh vegetables (Google it if you don’t believe me), so more work for you or less work - your choice.  I’m just sayin’.

You can use all broccoli or all cauliflower.  For example, if your family likes high carb comfort food, try using 2 lbs. of cauliflower and no broccoli the first time – that way it will look more appealing to them because it will look more like macaroni and cheese or hash brown casserole – but cauliflower is a VEGETABLE! Yeah!

To cut calories in this dish, I recommend:
Decrease cheese amount to 1 ½ cups
Skip Ritz topping or decrease to ¼ stack
Use fat free sour cream
Use skim milk

 Be sure to stick on label before freezing - of course!

Another great thing about this dish is that it FREEZES well!!  My son and his fiancĂ© tried it after it had been cooked, frozen, thawed, and reheated in the microwave.  They gave it a big thumbs up.

Before we built our home, my friend Colleen showed me her home that she had built recently.  One of my favorite things was her tile “rug” at the landing of her basement staircase – a high-traffic area that was going to get a lot of wear and tear.
Tile is much more durable than hardwood.  At my previous home, the main reason we had to refinish our hardwood floors was because the kitchen bar stools scratched them terribly – even though I had installed the pads on the bottoms of the legs.

My builder said it was no problem for his people to install some tile rugs.  The most wonderful place to put a tile rug is under an island overhang – where the bar stools are located.  Keep in mind that the installer has to be good at his/her math – because the hardwoods are installed first.  The end result is that the hardwoods and the tile are level; it’s a smooth transition. My builder did a hardwood frame around the tile rug.

Quick, Easy Asparagus Cooked in the Microwave
Ingredients:
1 bunch of asparagus
Olive oil spray
Garlic powder
Mrs. Dash or Nature’s Seasons
Salt
Pepper
A bunch of asparagus

Spray 9” x 13” Pyrex dish with olive oil spray.  Wash asparagus.  Cut off ends that aren’t a pretty green color.  

 Arrange in the 9 x 13 as follows:

 There will be approximately this much left over for lunch tomorrow:

Spray the asparagus with olive oil spray so that the seasonings will stick.

Sprinkle the 4 seasonings on the asparagus.  If you don’t know how much to use, mix together  ¼ teaspoon of each into a bowl, and then sprinkle that mixture on the asparagus.  This way you know how to adjust if your family wants an adjustment.

Cover it loosely so that it will steam.  I have a plastic cover that I put on a little crooked.  Paper plates will work if you don’t have a special cover.

In a high wattage microwave, cook on high for 2 minutes and 40 seconds.  Taste test.  If you like it more tender, cook for 20 seconds more.  

 Delicious!!  I promise!!

BTW If you use the jumbo asparagus from Costco, you will need to cook it for 4 minutes and then taste test.

Here are all of the instructions on one page without the photos:

I used an iPhone 5, but this feature is also available on the 4S after it's been updated with iOS 6.

Tap the Camera icon.

Tap "Options" .

 Tap "Panorama".



Hold the camera in the air.

Tap the camera icon per the following photo.


Slowly move the camera from the left to the right, keeping it at the same level.


When you're done, tap "Done".


 You can crop a panoramic photo using your normal photo software.  For example, this is an original version of a panoramic photo:

The panoramic feature also works going down to up.
This would be useful to photograph the Empire State Building or the Eiffel Tower!

I have been tailgating at Clemson for YEARS and thought I had seen it all.  At the Georgia Tech game, however, I passed something really interesting – a low country boil simmering under a custom-made screen.  A group of mostly engineers, some from Clemson’s class of 2008, were getting ready to eat.  I lived in Charleston, SC for a couple of years, so the low country boil was nothing new… but in Clemson’s Lot 2 during tailgating?  THAT was new.  Leave it up to an engineer to build the perfect counter-height frames.  Typically a low country boil includes sausage, shrimp, corn, potatoes, and seafood seasoning.

They poured the contents of the huge pot onto the screen and this group from mostly Charleston, SC and Charlotte, NC dug in.

... Speaking of engineers, years ago we had a neighbor who had an annual house-party with his engineering buddies. As a practical joke, they re-wired several of the switches in our friend’s house so that the next morning, he turned on the switch for the garbage disposal and the lights in the den turned on.  When he turned on the switch for the ceiling fan in the bedroom, the lights in the kitchen turned on. (etc.)  They thought it was absolutely hysterical – because it was.
